Program Description

The baking and pastry arts program is the perfect experience to learn the essentials of a sweet career in a real-world setting. A good pastry chef not only knows how to make a good product but understands the science behind the method. The baking and pastry arts program is an intensive hands-on class that focuses on fundamentals and prepares you to put everything you have learned about baking and pastry into practice in the super popular ROC Cafe and Bakery.

 

In the cafe operations, you'll create delicious cookies, frostings, cakes, bread, pastries, quick breads, candies, and more for our appreciative customers. This course includes instruction in food safety principles of regulatory standards and measures required to prevent foodborne illness, the legal costs to an operation after dealing with a foodborne illness outbreak and understanding the microworld as well as the three major contaminants.

 

HIGH SCHOOL CREDIT AVAILABLE

Students earn 15 elective units each semester toward their high school graduation.

 

College prep course.  A-G approved.  Meets area “G” approval for UC and CSU admissions.

 

PROFESSIONAL CERTIFICATION OPPORTUNITIES

ROC certifications offered to students completing the Culinary Arts pathway include:

  • Culinary Arts Certificate of Completion
  • ServSafe Food Handler Certification
